Main Active Nutrients of Daikon

Daikon is a special plant with innate protective natural defense systems just like many other plants. In addition to nutrients such as vitamin C, potassium, and dietary fiber, daikon contains digestive enzymes such as amylase, an enzyme that breaks down starch, lipase, which breaks down fat, and protease, which breaks down protein. 

And within the skin (outer layer of the plant) resides a special defense system made of the molecules of glucosinolates and the enzyme myrosinase. These are not in the same compartments or vacuoles. Each set of molecules, i.e. the glucosinolates and the enzyme myrosinase is in it's own "cellular chamber". However, when insects, animals or even humans chew the skin of daikon, they break the walls of these "cellular chambers" and allow the interaction of glucosinolates and myrosinase.

When the enzyme myrosinase reacts on glucosinolates, there is production of a group of compounds called isothiocyanates. These isothiocyanates are very powerful against insects or other animals that try to destroy the plant. This special property of daikon has been further studied and researched and in fact, it has been shown that the isothiocyanates are very powerful in preventing and/or remediating several human health challenges including cancer.

 In figure (A) and (B), ITCs (isothiocyanates), represent the product of the enzyme myrosinase and glucosinolates. This helps enhance the action of Nrf2 as well as inhibiting the action of the bad chronic inflammation actor, Nf-kB.

By performing these key roles, isothiocyanates provide many health benefits in prevention as well as controlling the progression of some diseases.

Sulfo-Daikon

Sulforaphane is derived from the enzymatic decomposition of glucosinolate, and the enzymatic reaction is caused by an enzyme contained in daikon called myrosinase. Studies have also shown that Japanese daikon has a high content of this enzyme.
